Vegan Vietnamese Noodle Soup

Hello everyone.   I didn’t want my first recipe posting to be quite so vegan soup 12complicated but this is what I had already planned for dinner.   Although this seems complicated, it’s really not.  There just happens to be a lot of spices that give it the Vietnamese flair.   The nice thing about many Asian soups is that you get to eat both cooked and raw vegetables.   This made 4 large servings and was very easy to reheat and make up the next day. Changes to Simply Vegan!

I’m sure you have been wondering why I haven’t posted lately.  A lot of things have changed in my life.  First, I graduated from the University of Southern California.

USCAfter some soul searching on what I wanted to do, I decided to see the world.  I don’t just want to see it as a tourist, but rather experience each country I visit as the locals do.  I plan to live out of my suitcase for a while.  I will look for work in each country I visit in order to fund my travels.  Read more

My friend and I decided to do a two week raw cleanse/challenge/whatever you want to call it. For the challenge, I decided to borrow my parent’s food processor. I figured, unless I want to eat a lot of salads and smoothies, I need a food processor for this challenge. Plus, this means that I get to come up with some creative recipes! Basically.. Every Christmas my mom would make these delectable little thumbprint cookies. Who would’ve thought that even before my mom became vegan, her signature cookie recipe was already vegan! Let’s just say that this fact made it even easier for me to convince her to let me post the recipe!

Best of Expo West ~ Simply Vegan Style

Last weekend was insane! My feet are sore, my arms are sore, my tummy is sore.. wait, is that a bad thing? ;) But it was all worth it because I got to attend the Natural Products Expo West in Anaheim, California! I went two of the days and still wasn’t even able to see all of the convention!
