Hello everyone. I didn’t want my first recipe posting to be quite so complicated but this is what I had already planned for dinner. Although this seems complicated, it’s really not. There just happens to be a lot of spices that give it the Vietnamese flair. The nice thing about many Asian soups is that you get to eat both cooked and raw vegetables. School is slowly coming to an end. Honestly, it couldn’t come fast enough since when I graduate I will be packing my stuff up and moving over to China! But for now, I am caught between day dreaming about hanging with pandas and scrambling to finish my essay for my writing class.
I have been going crazy since doing this raw food challenge! (A good kind of crazy, don’t worry!) Using a food processor makes recipes so much easier. Although I am lucky enough to be able to borrow my parent’s processor, when the time comes to give it back I will definitely be purchasing my own.
This delicious orange soup was inspired by the veggies that were about to go bad in my fridge. I had a big bag of carrots (that I was lucky enough to come across for a really good price!) and a container full of chopped cabbage that needed to be made into something.. anything!
This recipe is great for anyone looking to pack a lot of protein into their meals. Tempeh is a great source of protein and the spinach or kale give a little boost in the protein content as well. Also, if you’re looking to build muscle, carbohydrates are important for your diet which you will receive from the sweet potatoes!
I’m back from my road trip! It has been difficult for me to transition back into my daily lifestyle since coming home. I need to get back into my regular eating habits and catch the gym bug again! When I was little my mom would make my brother and I shepherd’s pie all the time. It is quick, easy, and if you make a big batch, you can warm it up and eat it all week. Protein and veggies all in one.. this dish can’t get any better!
When you were little, did your family ever have taco night? I was never a huge fan of tacos but I loved these nights because I got to pick and choose what went onto my taco. Essentially I was creating my meal, which as a kid was pretty cool 🙂
