Thanksgiving is in two days! I am posting my third Thanksgiving recipe just in time! I received a lot of requests for a gluten-free stuffing. Usually you see stuffing made with bread but I figured it would be too hard for people to find gluten-free and vegan bread. After all, this is Simply Vegan.. gotta keep things simple!

This recipe uses no bread but don’t worry.. it is packed with flavor! Plus quinoa is loaded with nutrients and protein. Why not add some nutrition to your Thanksgiving dishes 😉 ?

I can’t believe Thanksgiving is this week! Time flew by so fast! Not to mention I’ve noticed that people are already putting up Christmas decorations.. I was thinking it is a little too early for that but honestly, the longer I can be in the Christmas spirit the better!

So as I promised, here is my second Thanksgiving recipe. A vegan, gluten-free, fried-free Green Bean Casserole! Not going to lie.. I sat down and ate this whole thing in one sitting. *Blushes* You may want to double this recipe and make two. It is that good!

Sorry for the lack of posts, school has been difficult! I can’t wait for winter break to finally come. I have the best trip planned out and I can’t wait! I’ll be announcing it soon because I am hoping to meet some fellow vegans along the way! For now though, I will try to enjoy this lovely Autumn weather in between my exams and studying 🙂

A great fall vegetable that is coming into season is Butternut Squash! This is an extremely versatile vegetable that I love cooking with. You can make soup, roast it, stuff it, or.. make them into fries!

Roasted Broccoli in a Mushroom Cream Sauce

Hands down, my favorite vegetable is broccoli! There is so much you can do with it and it is so easy to make. I had never tried broccoli in a cream sauce before, which is surprising since any type of veggie tastes great in a nice creamy sauce. I knew I quickly had to come up with a sauce like that for my favorite veggie.
