Caulifower Tabouli Salad ~ RAW

I have been going crazy since doing this raw food challenge! (A good kind of crazy, don’t worry!) Using a food processor makes recipes so much easier. Although I am lucky enough to be able to borrow my parent’s processor, when the time comes to give it back I will definitely be purchasing my own.


I bought this great big head of cauliflower from an organic farmer at a farmer’s market next to my mom’s work. I immediately though; what can I make with this that is raw? I’ve heard of people processing cauliflower to make it more of a rice or couscous consistency so I figured I would give it a whirl! It works great, is super easy, and the texture of the cauliflower is awesome. Definitely give it a try!



1 head of Cauliflower

1/2 cup Parsley, chopped

1/2 cup Red Onion, dice

1/2 cup Cherry Tomatoes, diced (I didn’t have any at the time of these pictures but I added them later and they made the recipe even better!)

1 small Lemon, juiced

1/2 tbsp Sea Salt


1. Cut the cauliflower in florets and process them in two batches.

2. Pour the cauliflower into a large mixing bowl.

3. Add in all of the other ingredients into the bowl with the cauliflower and mix thoroughly.

4. When you’re done, serve! If you don’t want to eat it then, cover it and store the tabouli in the fridge.
