Kale Salad with Roasted Maple Carrots

Kale salad is loved by many.  Here’s a quick and easy way to spruce up that raw kale.  The roasted carrots add warmth and sweetness to this salad making it simply delicious.


Dressing Ingredients

1/4 cup balsamic vinegar
2 tbsp maple syrup
1 tbsp stone ground mustard
1/4 tsp salt


Tear kale into a bowl and toss with dressing
(Doing this a few hours ahead of time is best.  Toss every 30 minutes to an hour and then drain excess dressing)

1/4 cup balsamic vinegar
2 tbsp maple syrup
1 tbsp Herbs de Provence

  • Cut carrots into bite size chunks.
  • Mix vinegar and maple syrup in a bowl.
  • Add carrots and toss to coat.
  • Sprinkle with herb and toss more.
  • Spread on a baking sheet covered with parchment
  • Roast at 475 degrees for 10 minutes or until tender.

roasted carrot 1You may need to brush left over vinegar mix on the carrots as they cook if they appear to dry out.

When carrots are done remove from oven and add to the kale salad.  Sprinkle with pine nuts and serve.
