I’m sure you have been wondering why I haven’t posted lately. A lot of things have changed in my life. First, I graduated from the University of Southern California.
After some soul searching on what I wanted to do, I decided to see the world. I don’t just want to see it as a tourist, but rather experience each country I visit as the locals do. School is slowly coming to an end. Honestly, it couldn’t come fast enough since when I graduate I will be packing my stuff up and moving over to China! But for now, I am caught between day dreaming about hanging with pandas and scrambling to finish my essay for my writing class.
This was my first attempt at making my own nut butter ever! I was nervous, seeing as I don’t even use or buy cashew butter. Yet I had all of these leftover cashews from making my Raw Cashew Cookie Balls so I thought, why not give it a whirl?
I have been going crazy since doing this raw food challenge! (A good kind of crazy, don’t worry!) Using a food processor makes recipes so much easier. Although I am lucky enough to be able to borrow my parent’s processor, when the time comes to give it back I will definitely be purchasing my own.
My friend and I decided to do a two week raw cleanse/challenge/whatever you want to call it. For the challenge, I decided to borrow my parent’s food processor. Every Christmas my mom would make these delectable little thumbprint cookies. Who would’ve thought that even before my mom became vegan, her signature cookie recipe was already vegan! Let’s just say that this fact made it even easier for me to convince her to let me post the recipe!
This delicious orange soup was inspired by the veggies that were about to go bad in my fridge. I had a big bag of carrots (that I was lucky enough to come across for a really good price!) and a container full of chopped cabbage that needed to be made into something.. anything!
