Roasted Rosemary Sweet Potatoes

sweet potatoesThese are awesome as a side dish, appetizer or for snacking.  They are good hot, cold or room temperature.   This is a nice, healthy low calorie snack.  And they are heart healthy because they are prepared with no oil.




  • 6 sweet potatoes, peeled and cubed
  • 1 1/2 TBS of crushed rosemary
  • 2 TBS of Italian seasoning


  • Peel and cube the sweet potatoes
  • Place in a zip lock bag with 1/8th a cup of water
  • Zip the bag and shake to coat all the potatoes
  • Open bag and put in the crushed rosemary and Italian seasoning
  • Zip the bag and shake to coat evening
  • Line a cookie sheet with parchment paper (parchment paper is important since we are using no oil)
  • Empty contents of bag onto parchment paper and spread evenly
  • Roast in oven at 400 degrees until they are soft and lightly browned
  • Turn the potatoes a few times while roasting

Cube the Sweet Potatoes
